A new winemaker
Hilde Chevillot joined
Abbotts & Delaunay
Hilde Chevillot joined Abbotts & Delaunay since last August.
After 15 years experience
both in France and abroad, Chevillot,
based at the winery in the small village
of Marseillette near Carcassonne, will manage all of Abbotts &
Delaunay's grower partnerships. She will also oversee the winemaking process
from vinification to bottling, working closely with oenologist and owner of Abbotts
& Delaunay, Laurent Delaunay.
After receiving her
diplomas in agronomy from the University
of Gand and in oenology from ENSA in Montpellier, Chevillot
specialised in quality control in the agricultural industry, and on finishing
her studies, took over responsibility for the vinification process at Domaine
de la Solitude in Châteauneuf-du-Pape. This first step on the career ladder then
led her to Chile
After returning to France,
she spent some time at La Société Viticole de Rieux Minervois, before becoming
part of the Anne de Joyeuse coop in Limoux which encompassed 3330 hectares of
vineyards and 600 winemaker partners. During seven years in this challenging
role, she optimized the process of bringing in the grapes during harvest and also
implemented different specifications for certification concerning sustainable
agriculture, CARREFOUR Quality Line
In 2008 she joined Baron
Philippe de Rothschild, in charge of managing the vineyards and the wine making
for the coop and producer partners as well as contributing to the blending of some
of their most prestigious brands.
